Honey mustard chicken

 

This is an easy way to dress up chicken pieces - and there's only four ingredients - three of which you probably already have in the cupboard! While it's in the oven, you can roast the potatoes at the same time then steam the greens or throw together a large salad.

Ingredients

  • 2 chicken breasts, 400-500 g in total
  • 1 tablespoon honey
  • 1 tablespoon grainy mustard
  • 1-2 cloves garlic, crushed (optional)
  • To serve:
  • broccolini or green beans
  • 5-6 baby chat potatoes

Directions

  1. Spray or brush a small ovenproof dish with a little oil. Place chicken fillets in a single layer.
  2. In a small bowl, mix honey, mustard and garlic together. Spread over chicken. Cover the dish with baking paper or aluminium foil.
  3. Bake chicken at 180°C (350°F) for 15 minutes. Uncover, baste with the juices, and cook for a further 5 minutes or so until tender.
  4. Serve with steamed or microwaved broccolini or green beans and baked baby potatoes.

Variations

Swap the honey for maple syrup or agave syrup.
